I am dealing with this myself today. Just move a pilot group over to the new server running UPD 5.0. In my wisdom I used the tool to set the default paper type to plain. Shouldn't cause any issues. Except The users setup all of their docments wrong.
In the page setup they say first page 'Tray 2' and all others 'Tray 3'. So what happens is the printer gets confused and prompts to load paper because tray 2 has 'Letterhead'(and the printer is set with this config) but because they left the paper type plain and slected the tray it fails. If you select Letterhead instead of 'Tray 2' and 'Plain' in stead of Tray 3 in the page setup it works as it should. If you try to force jobs to specific tray and there is a paper type mistmatch it will not ptint automatically. Because we have thousands of users and our organization is user centric I will be reloading the driver with the default setting of 'unspecificed' which seems to work around the documents that are not setup properly. I told them they should select the paper type on the tray because if they print to a differnt printer with differnt tray assignments they will have the same issue. Printing seems to confuse management, the helpdesk, and the desktop teams.

I'm not sure what to tell you. I haven't hand a single issue like this with the UPD vs standard drivers. I have a ton of 400/4050/4200/4250 and have no issues.
I have over 1000 printing devices and only 1 site isn't on a version of the UPD. I have UPD 4.1,4.5,4.7.2 and I'm trying to get them all to v5.0 now.
If its prompting there is a reason. There is a paper type/size mismatch somewhere.
Make sure the paper size/type assigned on the device are correct. Nad make sure the document you printing has the correct size/type in the page setup.
This driver has been great. My nightmare was getting over 60 model specific drivers to work on the same server and not have new drivers break old ones. Now I don't even worry about it because i know all new models are already supported. Imho i found the upd unstable but then again I inherited the server with 350 printers on it and it crashing every other week. Since I rebuilt it and cloned it for use as a test machine. Now I test every driver prior to it going on the main box and if I have any issues and can repeat them, I tell the helpdesk stfu and return the printer and buy a different one.
This server has been running for 6 months now with no issues and have only had one printer that I rejected as incompatible. Upd seems good in theory but being short staffed none of the other engineers or myself have the time to properly test and deploy using the upd but i digress. Drivers should have nothing to do with tray assignment. All the configuration is done on the printer and the document. I don't have a PHD in printers. Lol Old driver install - you can select tray for your job to print and it prints from it. Jobs seem to default to tray 3. New driver install - select your tray for your job and it sends it to tray 1. It always sends to tray 1. Now, I don't have any idea how this all works, but maybe considering you claim to understand how it all works, you can explain it and why the behavior has changed between HP drivers if they have nothing to do with it considering that is the only thing that has changed. It's also interesting that uninstalling the new version (remove and delete driver) and then installing an old version made everything work again.

I ran into the same issue. Your missing the point. If the printer is configured with the paper size/type you should not be selecting a tray destination for your job.
You should be selecting the paper size/type. If you don't when you go to print to a differnet printers the trays may not match up. I found that if I installed the UPD with the default printing preference for paper type set to 'unspecified' that it acted as your requesting. You can contol a lot from the driver, but it makes management a nightmare. Let the printer figure out where the job should go based of the paper type/size. It doesn't work. That's my point.
I can set the trays on the printer AND in the software and then tell the print job what tray to use on top of it all and it still wants the manual tray. Even if I don't set the trays (everything is plain 8.5 x 11 white) it wants tray 1 which is manual feed.
The old driver, if the trays aren't defined, will start with tray 3 and then tray 2 and then look for tray 1. That's perfect. But the new version won't do it.
I found the old version, installed it and it works that way again. I have the same problem printing with manual feed, but it only seems to happen in word. EDIT: Actually i figured it out! It only affected microsoft office applications. The problem was that the 'page setup' for the DOCUMENT was set to 'automatically select' when it should have been 'default tray'. YOu also can make it the default system wide. Then when you pick tray 1 in the driver, it will actually honour it now.

Alternatively, you could save it as a default in the page setup of the document and then it would always print to manual feed, regardless of what the drivers say. Here is a brief step by step to fix my particular problem. Go to 'page setup' in your MS office application. Make sure that the document is set to be 'default tray', NOT autmoatically select under paper source. Print properties, select paper source as tray 1.
Hit print and printer will now prompt you to load manual feed. Load printer and press GO. This simply puts the onus on the user to change the paper type at the printer for specific jobs, rather than at their desk. This doesn't work in our environment (Or I imagine any environment that changes paper types frequently,) the users may print a specific type of paper, and forget to change the paper type back to the original type when done.
